Protein Chia Seed Pudding
Chia Seeds are a great way to get Omega 3’s, fibre, iron, antioxidants, protein and calcium. For little seeds they certainly pack a punch nutrition wise which is why I absolutely LOVE adding them into my weekly nutrition plan. This is a great ‘on the go’ meal for the when you need to grab a healthy option quickly before you rush out the door and it’s also simple and easy to make. Word of warning…some people love the texture and some people hate it, you won’t know till you try 😉 haha!

Ingredients :
1 ½ cups unsweetened Almond Milk or Coconut Milk
1⁄2 cup Chia Seeds
¼ cup Vanilla Protein Powder (I love to use Prana On Vegan Protein)
½ tsp Cinnamon
½ tsp Cocoa Powder or Vanilla Extract if you aren’t feeling chocolate
pinch of Sea Salt
Directions :
1. Mix all ingredients together in a bowl & split into 4 glasses. Cover and let set.
In the morning, top with you favourite Berries, 1/4 Banana, 1Tbs Coconut Yoghurt & a sprinkle of Coconut Chips & Cacao Nibs.
