Protein Cinnamon Rolls

I have always loved the traditional cinnamon roll – but with its high sugar and fat content, I can’t be having one everyday! πŸ˜‰

Goals to achieve! So here is a protein version of a traditional cinnamon roll which I hope you also enjoy!

Protein Cinnamon Rolls

ΒΌ cup almond flour

1 tbsp coconut sugar

Baking powder

salt

ground cinnamon

1 egg

2 egg whites

2 tbsp coconut oil

vanilla extract

Topping:

30g low-fat cream cheese

1 tbsp coconut sugar

2 tbsps whey protein isolate (I like vanilla)

 

Preparation

Line a baking sheet with parchment paper and preheat oven at 210C. Mix almond flour, coconut sugar, baking powder, salt and cinnamon in a bowl. Add egg, white eggs, coconut oil, and vanilla extract.
Sprinkle cinnamon into dough and mix- Turn out dough onto parchment-lined baking sheet and shape by hand into a rough circle. Bake 15 minutes. Remove from oven and let cool.
Icing:
Beat cream cheese, coconut sugar and whey protein isolate until smooth. Spread over the scone.
