Refreshing Mango Salsa Salad

It’s that time of year where I LOVE making delicious, nutritious salads.

Salads in winter just don’t appeal to me…say whaaat!? A health and fitness coach that doesn’t eat salads 24/7? haha.

This particular recipe is an absolute gem! So refreshing juicy and jam-packed with nutrients! Pretty good combo if you ask me.

Top with roasted fish or sliced chicken breast to get your protein in also.

Ingredients : 

2 Mango’s, Diced
2 Stalks Spring Onion, Chopped Finely
½ Cup Red Capsicum
4 Cups Spinach, Chopped, Raw
2 Tbsp Olive Oil
1 Tbsp Coriander
½ tsp Salt
½ tsp Black Pepper
½ Garlic Clove, Crushed
½ tsp Cumin, Ground
2 tsp Fresh Lime Juice

 

Directions :

Peel and chop mango. Chop vegetables. Place mango and vegetables in a serving bowl and set aside.

Meanwhile, prepare cilantro vinaigrette by combining remaining ingredients. Toss with salad.

 

Notes : 

This salad is delicious when paired with roasted fish. The mango can also be substituted with nectarines or peaches.
