The Mushroom Mash
Mushroom Lover? Bacon Lover? If so, you might like to give this Fit, Healthy and Confident meal a whirl! Super easy to prepare, loaded with lots of good fats, and the flavour…well, you can tell me what you think. Enjoy!
Ingredients :
3 Portobello Mushrooms, Sliced
1 Tbs Brown Onion, Diced
1/4 Tsp Garlic, Crushed
1/2 Zucchini, Sliced
1 Handful Spinach
2 Slices of Bacon, Diced
Salt & Pepper
1 Egg
Instructions :
1. Place all ingredients (except the egg) into a non stick pan and fry until this bacon is crispy.
2. When your mushroom mash is done, place onto a plate.
3. In the same pan with all the left over fat from the mushroom mash, fry 1 egg OR you can have a poached egg if you prefer
4. Place on top of your mushroom mash and add your garnish of choice. I love Basil personally.
