Broccoli Slaw Chicken Stir-Fry – Quick, Delicious and Healthy

BROCCOLI SLAW CHICKEN STIR-FRY

Ingredients : 

2 Tbsp olive oil

500g. boneless, skinless, chicken thighs

1 onion, finely diced

1 Tbsp ginger, minced

3 Tbsp balsamic vinegar

2 Tbsp sesame oil

4 Tbsp fish sauce – ½ cup water

1 tsp chili flakes

2 cloves garlic, minced

1 Tbsp coconut sugar

4 cups broccoli slaw (broccoli and cabbage mix)*

1 cup chopped spring onions

*Shredded stalks of broccoli and cabbage

 

Directions :

  1. Slice the chicken into strips.
  2. Heat olive oil in a wok pan.
  3. Add garlic, ginger, and onion. Stir until onion is clear.
  4. Add the sliced chicken and stir-fry for 3 minutes.
  5. Add the balsamic vinegar, sesame oil, fish sauce, water, chili flakes, and coconut sugar.
  6. Stir well and simmer for 5 minutes.
  7. Add the broccoli slaw and spring onions and simmer for 2 minutes.
  8. Serve.
