Banana protein waffles
Fluffy banana protein waffles made from almond flour and real ingredients. A quick high-protein breakfast that feels like a treat without the sugar crash.
Waffles that hit the protein target without tasting like cardboard. The banana keeps them moist, the almond flour keeps the carbs reasonable, and the psyllium gives them structure. Top with peanut butter and walnuts, done.
Ingredients
- 1/2 ripe banana
- 2 eggs
- 1 scoop protein powder
- 6 tablespoons almond flour
- 100ml coconut milk
- 1/2 tablespoon ground psyllium husk powder
- 1/2 pinch salt
- 1/2 teaspoon baking powder
- 1/4 teaspoon vanilla extract
- 1/2 teaspoon ground cinnamon
- Coconut oil or butter, for frying
Method
- Mix all ingredients together in a bowl and let sit for 5 minutes so the psyllium can absorb.
- Cook in a waffle maker, or in a non-stick pan with coconut oil if you don't have one, it works either way.
- Serve with natural peanut butter and crushed walnuts.
