Chocolate coconut and almond bites
Rich chocolate coconut bites coated in slivered almonds, low in sugar, low in carbs, and a serious chocolate fix in a small package. Make a batch and ration them.
If you’re a chocolate-coconut person, these are dangerous. Rich, low in sugar, low in carbs, and they taste better than any bought truffle. Crumble one over Greek yoghurt for a different angle. Control is required.
Ingredients
- 100g dark chocolate (85%), chopped into small pieces
- 5 tablespoons full-fat cream
- 3/4 cup shredded coconut
- 1/2 teaspoon vanilla extract (must be extract, not essence)
- 1/4 cup slivered almonds, crushed smaller
- 1 teaspoon virgin coconut oil
Method
- Place cream into a pot and bring just to a boil.
- Take off the heat and add the chopped chocolate. Whisk until completely melted.
- Add vanilla extract, coconut oil, and 1/2 cup of the shredded coconut.
- Pour into a bowl and refrigerate until just cooled, 20–30 minutes.
- While the mixture is cooling, place the crushed almonds and remaining shredded coconut into a separate bowl.
- Take the wet mixture from the fridge and roll into bite-sized balls. Roll each one in the almond-coconut coating.
- Return to the fridge for another 10–15 minutes to set.
