Chocolate protein mug cake
A single-serve chocolate protein mug cake, ready in under two minutes, properly satisfying, and a sane way to handle a sweet craving.
One of my all-time favourite desserts. Quick, satisfying, and properly filling, especially in the colder months when you want something warm. Vegan protein works better here than whey; whey can go rubbery.
Ingredients
- 1/4 cup unsweetened vanilla almond milk
- 1/4 teaspoon vanilla extract
- 25g chocolate protein powder (vegan protein works better in baking, doesn't go rubbery)
- 1 tablespoon unsweetened cocoa powder
- 1 teaspoon coconut flour
- 1/2 teaspoon baking powder
- Pinch of stevia
- 1/2 teaspoon coconut oil
Method
- Mix all ingredients together in a microwave-safe mug.
- Heat in the microwave for 25–35 seconds, until the middle is cake-like and the top and edges are slightly running.
- Top with Greek yoghurt and berries, or make icing: 1 tablespoon light cream cheese mixed with a pinch of stevia and 1 teaspoon cocoa powder.
