Chocolate protein pancakes
High-protein chocolate pancakes, quick to whip up, made from real ingredients, and a satisfying breakfast that keeps you full through the morning.
A great breakfast for a Sunday morning, or every morning. These cook up quick, hit the protein target, and taste like a treat without the sugar spike. Use a good non-stick pan and they’ll come out perfect.
Ingredients
- 3 eggs (1 whole egg + 2 egg whites)
- Splash of unsweetened almond milk or coconut milk
- 1/4 cup chocolate protein powder (vegan protein works well)
- 1 teaspoon cocoa powder
- 1/4 cup blended oats
- Pinch of sea salt
- 1/2 teaspoon stevia powder (if using pea protein)
- 1 teaspoon coconut oil, for cooking
Method
- Whisk all ingredients together in a bowl and let sit for 5 minutes.
- Heat a pan with 1 teaspoon coconut oil over medium heat and cook the pancakes, about 2 minutes per side.
- Top with fresh or frozen berries, 1 tablespoon unsweetened Greek yoghurt, a sprinkle of coconut chips, and 1 tablespoon pure maple syrup.
- Tip: Use a very good non-stick pan, these pancakes are notorious for sticking and turning into scrambled pancakes.
