Refreshing mango salsa salad

A bright summer salad with mango, capsicum, and spinach in a cumin-lime vinaigrette. Top with grilled fish or chicken for a balanced, refreshing meal.

Refreshing mango salsa salad

A gem in summer, refreshing, juicy, and packed with nutrients. Top with roasted fish or sliced chicken for the protein. Mango works best, but nectarines or peaches do the same job in a pinch.

Ingredients

  • 2 mangoes, diced
  • 2 stalks spring onion, finely chopped
  • 1/2 cup red capsicum
  • 4 cups raw spinach, chopped
  • 2 tablespoons olive oil
  • 1 tablespoon coriander
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 garlic clove, crushed
  • 1/2 teaspoon ground cumin
  • 2 teaspoons fresh lime juice

Method

  1. Peel and chop the mangoes. Chop the vegetables.
  2. Place the mango and vegetables in a serving bowl and set aside.
  3. Combine the remaining ingredients (oil, coriander, salt, pepper, garlic, cumin, lime juice) for the dressing.
  4. Toss the dressing through the salad.
  5. Note: pairs really well with roasted fish. Mango can be substituted with nectarines or peaches.
