Pesto chicken and zoodles
Shredded chicken tossed with basil pesto over spiralised zucchini noodles, a high-protein low-carb dinner that comes together in 15 minutes.
One of my clients’ favourites. Loaded with flavour, good fats, and protein, and simple enough to whip up on the busiest of days. Pre-cook chicken on a Sunday and this becomes a 5-minute dinner.
Ingredients
- Chicken: 150g shredded chicken
- Chicken: 1 tablespoon basil pesto
- Chicken: 1 tablespoon olive oil
- Chicken: salt and pepper
- Zoodles: 1 large zucchini, spiralised
- Zoodles: salt and pepper
- Zoodles: 1 tablespoon basil pesto
- Zoodles: 1 tablespoon parmesan cheese
- Zoodles: squeeze of lemon
- Zoodles: 1 teaspoon lemon rind
Method
- In a medium bowl, combine the shredded chicken, pesto, olive oil, salt, and pepper. Toss until the chicken is coated.
- Heat a large skillet over medium-high heat and add 1 teaspoon olive oil.
- Add the spiralised zucchini, season with salt and pepper. Toss and heat through for about 1 minute.
- Remove from the heat and divide between two bowls.
- Top the noodles with the shredded chicken, more pesto, parmesan, lemon rind, and a squeeze of lemon juice.
