Protein cinnamon rolls
A protein-packed take on the classic cinnamon roll. All the warm cinnamon flavour, none of the sugar crash. Topped with a cream cheese protein icing.
I love a traditional cinnamon roll, but with the sugar and fat content, they can’t be a daily thing. This is a protein version that hits the same flavour notes without the crash. Goals to achieve.
Ingredients
- 1/4 cup almond flour
- 1 tablespoon coconut sugar
- 1 teaspoon baking powder
- Pinch of salt
- 1 teaspoon ground cinnamon
- 1 egg
- 2 egg whites
- 2 tablespoons coconut oil
- 1 teaspoon vanilla extract
- Topping: 30g low-fat cream cheese
- Topping: 1 tablespoon coconut sugar
- Topping: 2 tablespoons whey protein isolate (vanilla)
Method
- Line a baking sheet with parchment paper and preheat oven to 210°C.
- Mix almond flour, coconut sugar, baking powder, salt, and cinnamon in a bowl.
- Add the egg, egg whites, coconut oil, and vanilla extract. Mix until combined.
- Sprinkle extra cinnamon into the dough and mix through. Turn out onto the parchment-lined baking sheet and shape by hand into a rough circle.
- Bake for 15 minutes. Remove from oven and let cool.
- For the icing: beat cream cheese, coconut sugar, and whey protein isolate until smooth. Spread over the cooled scone.
