Protein LCM bar

A high-protein remake of the classic LCM bar, caramel bone broth protein, blonde chocolate, and a no-bake method. Childhood snack, grown-up macros.

Protein LCM bar

Nostalgia at its finest, but with a protein kick. The bone broth protein is non-negotiable here; whey or pea changes the texture completely. Be quick whisking it in or you’ll get lumps.

Ingredients

  • 4 cups rice bubbles
  • 2 tablespoons honey
  • 1/4 cup Whole Earth baker's secret sugar
  • 130g organic butter
  • 3/4 cup caramel or vanilla bone broth protein (no substitute)
  • 8 squares Whittaker's blonde chocolate

Method

  1. Melt honey, baker's secret sugar, and butter in a saucepan.
  2. Take off the heat and quickly whisk in the bone broth protein powder until smooth, be quick or it goes lumpy.
  3. Once the mixture is smooth, add 4 cups of rice bubbles. Mix well.
  4. Press the mixture firmly into a lined dish so it sticks together.
  5. Melt the blonde chocolate in the microwave for about 1 minute and swirl over the top.
  6. Refrigerate overnight, or freeze for 30 minutes if you can't wait.
  7. Slice and enjoy.
